Crock Pot Pasta with Eggplant Sauce Recipe

Ingredients:

  • 1 medium eggplant, peeled and cut into 1″ cubes
  • 1 medium onion, chopped
  • 1 can (28 oz.) can Italian style tomatoes, cut up, undrained
  • 1 can (6 oz.) Italian-style tomato paste
  • 1 can (4 oz.) sliced mushrooms, drained
  • 2 cloves garlic, minced
  • 1/4 cup dry red wine
  • 1/4 cup water
  • 1-1/2 tsp. dried oregano, crushed
  • 1/2 cup pitted kalamata olives or pitted ripe olives, sliced
  • 2 TB chopped fresh parsley
  • 4 cups hot cooked penné pasta
  • 1/3 cup grated or shredded Parmesan cheese
  • 2 TB toasted pine nuts, optional

Cheese & Vegetable Casserole Recipe

Ingredients:

  • 4 cups frozen carrot, broccoli and cauliflower blend, thawed
  • 1/2 cup finely chopped onion (can use frozen chopped onion)
  • 1 (10-3/4 oz) can Healthy Request Cream of Mushroom Soup
  • 1/4 cup (one 2-ounce jar) chopped pimiento, drained
  • 1-1/2 cups cubed Velveeta Light processed cheese

Cheese Vegetable Casserole Crock Pot Recipe

Spray slow cooker container with butter-flavored cooking spray. In prepared container, combine thawed vegetables and onion. Add mushroom soup, pimiento and cheese. Mix well to combine. Cover and cook on LOW for 4 to 6 hours. Mix well before serving.

Serving size: 2/3 cup

140 calories, 3 grams fiber, 4 grams fat, 13 grams protein, 13 grams carbohydrates, 236 mg sodium, 373 mg calcium

  • 3 lbs cubed meat of choice
  • 8 peeled potatoes, cut into quarters.
  • 1 can of chopped tomatoes (about 28oz).
  • 4 cups of stock (beef or chicken depending on the choice of meat)
  • Bag of frozen mixed vegetables.
  • Salt and pepper.
  • Meat seasoning.
  • Herbs - chopped fresh or dried (i.e. parsley, oregano or a tiny pinch of sage)
  • 1/2 cup Olive oil.
  • 4oz size Red or white wine (red for red meat, white for chicken or turkey)

  • 1/2 cup Burgundy wine
  • 1/2 cup pimiento stuffed green olives, sliced
  • 3 bay leaves
  • 2 cloves garlic, minced
  • 1-1/2 tsp. Worcestershire sauce
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. chili powder
  • 1/8 tsp. ground black pepper
  • 1/3 cup cold water
  • 2 TB cold water
  • 2 TB cornstarch
