  • 280-300g Fresh Strawberries
  • 4oz Caster Sugar
  • 4oz Sunflower Margarine
  • 6oz Self Raising Flour
  • 1 Heaped Tbsp Fine Corn Flour (fine corn meal)
  • 1 tsp Vanilla Essence
  • 1 Medium Egg
  • 1oz Ground Almonds
  • Fresh Strawberries (for gateau layers)
  • Clotted Cream (or double cream whipped firm)
  • Powdered Sugar (to dust)
  • Sugared Praline Almonds (for garnish)

Compote Ingredients:

  • 1 cup orange juice
  • 1 cup sugar
  • 1/2 cup spiced rum
  • 2 tbsps cornstarch
  • 2 tbsps water
  • 6 mixed mixed fresh berries or thawed frozen mixed berries
  • French Toast:
  • 8 large eggs
  • 1 cup milk
  • 2 tbsps Grand Marnier or other orange liqueur
  • 1 1/2 tsps vanilla extract
  • 1 cup orange juice
  • 8 1-inch slices of challah, brioche or other egg bread
  • butter
  • confectioner’s sugar for garnish

Fresh Pineapple Lime Sorbet Recipe

Ingredients:

  • 1 ripe pineapple, about 4 cups
  • 1/3 cup frozen limeade concentrate
  • 1 - 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest

Prepare ahead:

Peel and cut the pineapple into cubes. Place the pineapple on a large jelly-roll pan in a single layer. Freeze the pineapple for at least 1 hour or longer; until very firm. Transfer the pineapple to a freezer storage container or bag and freeze for up to 1 month.
