Chicken Stir Fry with Snap Peas Recipe

Chicken Stir Fry with Snap Peas Recipe
- 1 pound skinless and boneless chicken breast halves.
- ¼ cup orange juice
- 2 tablespoons water
- 2 tablespoons light soy sauce
- 2 teaspoons starch
- 1 tablespoon cooking oil
- 1 cup fresh sugar snap peas or string beans
- Toasted sesame seeds or peanuts
Preparation:

Cut chicken into 1-inch pieces. Stir together orange juice, water soy sauce and cornstarch and set aside. Heat a wok or large skillet over high heat. Add cooking oil. Stir fry chicken, half at at time for 2 to 3 minutes or until no longer pink adding more oil if needed. Place all chicken in wok. Push chicken to side of the wok. Stir orange juice mixture and add to center of the wok. Cook and stir until thickened and bubbly. Add snap peas to wok and stir until chicken and snap peas are coated with sauce. Cover and simmer for 1 minute. Serve over you favorite noodles or rice.
