Chicken Tortilla Wedges Recipe

Ingredients:

  • ½ cup Tomato Salsa
  • ½ cup sour cream
  • ¼ cup chopped red bell pepper
  • ½ cup finely chopped cooked chicken
  • 8 flour tortillas (about 8 inches in diameter)
  • ¼ cup Guacamole
  • ½ cup refried beans
  • 1 cup shredded cheddar or Monterey Jack Cheese (4 ounce)

Preparation:

Heat oven to 350 degrees. Mix salsa and sour cream. Place half of the mixture to the side. Mix ½ of mixtures with ½ of the bell pepper and all of the chicken. Place 2 tortillas on ungreased cookie sheet and spread with chicken mixture. Spread 2 more tortillas with Guacamole and place on chicken mixture. Spread 2 more tortillas with refried beans and place on Guacamole. Top each pile with rest of salsa, a tortilla, bell pepper and cheese.

Bake about 15 minutes or until cheese is melted and filling is hot. Cut each pile into 8 wedges.
