Chocolate Soufflé Recipe

Chocolate Soufflé Recipe
- 2/3 cup sugar
- 2 tablespoons cornstarch
- 1 cup milk
- 1 (1 ounce) squares unsweetened chocolate
- 4 eggs separated
- ½ teaspoon salt
- ¼ teaspoon cream of tartar
- 1 tablespoon butter, softened
- 1 teaspoon vanilla extract

Preheat oven to 350 degrees. Butter a 1 ½ quart soufflé dish. Sprinkle dish with sugar and set aside. In a small heavy saucepan, blend 2/3 cup sugar and cornstarch. Gradually stir in milk. Add chocolate squares. Stir constantly over medium heat until chocolate melts and mixture thicken and bubbles. Remove from heat. In a medium bowl, beat egg whites with mixer on high speed until soft peaks form. Add salt and cream fo tarter. Beat until stiff peaks form. In another medium bowl beat egg yolks with mixer on high speen until thickened and lemon-colored, about 5 minutes. Gradually stir chocolate mixture, butter and vanilla into egg yolks. Slowly pour egg yolk mixture over egg whites, and then gently fold together. Pour mixture into the prepared soufflé dish. Bake 50 minutes or until knife instead off center comes out clean. Serve immediately.
