Country Pineapple Casserole Recipe

Ingredients:

  • 1/2 C. butter or margarine, softened
  • 2 C. sugar
  • 8 eggs
  • 2 20 oz. cans crushed pineapple, drained
  • 3 Tbs. lemon juice
  • 10 sliced day old white bread, cubed

Preparation:

In a mixing bowl mix the cream butter and sugar and eggs all at once. Stir in pineapple and lemon juice then fold in the bread cubes and pour into a greased 13×9×2 inch baking dish and bake uncovered at 325 degrees for 35-40 minutes or until set. Yield: 12-16 servings. A sweet and light dish.
