Creole Potato Salad Recipe

Creole Potato Salad Recipe
- 3 pounds red potatoes
- 3/4 cup mayonnaise
- 1/2 cup Creole mustard
- 2 tbsps apple cider vinegar
- 1 tsp sugar
- salt and fresh ground black pepper
- 1 small onion, chopped
- 2 stalks celery, chopped
- 2 cloves garlic, chopped
Preparation:

Place cubed potatoes in a large pot, fill with cold water and bring to a boil cooking until fork tender. Drain in a colander and let cool then use a small bowl to whisk together mayonnaise, mustard, apple cider vinegar, sugar, salt and pepper. Place cooled potatoes in a large bowl then add the chopped onions, celery, and garlic. Pour dressing over potatoes and veggies in bowl and mix well and season with salt pepper if needed. Serves 4 to 6. Refrigerate and serve chilled. Makes a great summer salad.
