Crock Pot Stew Recipe

Ingredients:

  • 3 lbs cubed meat of choice
  • 8 peeled potatoes, cut into quarters.
  • 1 can of chopped tomatoes (about 28oz).
  • 4 cups of stock (beef or chicken depending on the choice of meat)
  • Bag of frozen mixed vegetables.
  • Salt and pepper.
  • Meat seasoning.
  • Herbs - chopped fresh or dried (i.e. parsley, oregano or a tiny pinch of sage)
  • 1/2 cup Olive oil.
  • 4oz size Red or white wine (red for red meat, white for chicken or turkey)

Preparation:

Heat olive oil in pan; add meat cubes with seasoning, chopped herbs and saute brown quickly all over.
Add wine and reduce. Add 1 cup of the stock and reduce a little. Pour into crock pot.
Pour tomatoes into crock pot add potatoes and meat with rest of stock and vegetables; make sure everything is completely covered with liquid.
Cook all day on high setting - 8 hours.
Serve with plain boiled rice or in a rustic bread bowl by simply cutting top off and scooping out middle. Serves 4.
