Dijon Catfish Recipe

Dijon Catfish Recipe
- 4 8 ounce fresh or thawed catfish fillets that are about ½ inch thick
- 2 to 3 tablespoons Dijon-style mustard
- 4 lemon wedges
- ½ cup chopped pecans, toasted
- 2 tablespoons chopped fresh chives
Preparation:

Preheat the broiler. Lightly coat the rack of a broiler pan with nonstick cooking spray and set it aside. Rinse fish and then pat dry with paper towels. Place fillets on the broiler pan rack. Tuck under any thin edges of fish. Season with salt and pepper. Spread mustard on top of fillets. Broil 4 to 5 inches from the heat for 5 to 6 minutes or until fish flakes with a fork. Place each fillet on a plate with a lemon wedge and sprinkle with pecans and chives. Serve when ready.
