Easy Sunshine Carrots Recipe
- 2 tablespoons butter
- 4 cups carrots, washed shredded
- 1 onion, peeled and minced
- 1/2 cup sweet Sherry
- 1/4 teaspoon salt
- 1/8 teaspoon pepper, freshly cracked and ground
Preparation:

Melt the better in a lidded saucepan over medium-heat. Add the carrots, onion, sherry, salt and pepper. Cover and cook for 15 minutes until tender.
Alternately, you can cook the carrots in the oven. Melt the butter in a casserole dish. Mix the remaining ingredients in a large bowl. Carefully remove the casserole dish from the oven, swirl the butter to coat the bottom. Set the casserole dish on a heat resistant surface and spoon the carrot mixture into the prepared casserole dish. Cover tightly and bake for 25 – 30 minutes in at 350°.
Yield: 4 – 6 servings.
