Grand Marnier Soufflés Recipe

Ingredients:

  • 4 tablespoons butter
  • 1/3 cup flour
  • ¾ cup milk
  • ¼ cup orange-flavored liqueur
  • 1/3 cup granulated sugar
  • 1/2 teaspoon grated orange peel
  • 5 eggs, separated
  • 2 tablespoons granulated sugar
  • ½ teaspoon cream of tartar
  • Powdered sugar

Preparation:

Preheat oven to 350 degrees. Butter 9 6 ounce custard or soufflé cups. Sprinkle cups with sugar and set aside. In a small saucepan melt butter. Blend in flour. Add milk, liqueur, 1/3 cup granulated sugar and orange peel. Stir constantly over medium-high heat until mixture thickens and bubbles. Remove from heat. In a large bowl, beat egg whites with mixer on high speed until soft peaks form. Add 2 tablespoons granulated sugar and cream of tartar. Beat until stiff peaks form. In a medium bowl beat egg yolks with mixer on high speed until thickened and lemon colored, about 5 minutes. Stir liqueur into egg yolks. Slowly pour egg yolk mixture over egg whites, then gently fold together. Carefully pour ½ cup soufflé mixture into each prepared cup. Bake 25 to 30 minutes or until a knife inserted in center comes out clean. Sift powdered sugar over the top of the soufflé and serve immediately.
