Mexican Style Rice Balls Recipe
- 2 Cups cooked brown or regular long grain rice
- ½ cup all-purpose flour
- ½ teaspoon slat
- ¼ teaspoon pepper
- 2 eggs beaten
- 2 ounces Monterey Jack cheese with jalapeno chilies
- ¾ cup crushed tortilla chips (about 3 cups)
- Vegetable oil
Preparation:
Mexican Style Rice Balls Recipe
Mix rice, flour, salt, pepper and eggs. Cut cheese into twenty-four ½ inch cubes. With wet hands shape about 1 tablespoon rice mixture around each cheese cube. Roll rice balls in tortilla chips.
Heat oil (2 to 3 inches) in deep fryer or Dutch oven to 375 degrees. Fry rice balls 4 to six at a time about 3 ½ minutes or until golden brown. Remove with slotted spoon. Drain on paper towel and keep warm. Do the same with remaining rice balls. They can be served with your favorite salsa, guacamole or sour cream
