Mini Pita Pizza Recipe
- 2 pita breads (6-inch diameter)
- 2 cups sliced mushrooms (about 5 oz.)
- 1 small red onion.
- ¼ cup chopped green bell pepper
- 2 tablespoons chopped fresh Basil (or 2 teaspoons dried basil leaves)
- 1 cup finely shredded mozzarella cheese (4 oz)
- 1 tablespoon grated Parmesan cheese.

Preheat oven to 425 degrees. Cut each round in half to make four rounds. Place rounds with cut side up on ungreased cookie sheet. Put mushrooms on bread rounds. Add chopped onion and pepper. Sprinkle with basil and cheeses. Bake 8 to 10 minutes or until the cheese is melted. Cut each round into 8 pieces.
