Peppered Rib Roast Recipe

Peppered Rib Roast Recipe
- 1 tablespoon of melted butter
- 1 tablespoon of Worcestershire sauce
- 1 rib roast (4-5 lbs)
- 3 tablespoons of crushed peppercorn
- 1 tablespoon of thyme, fresh and chopped. If using dried thyme, use 1 teaspoon.
Preparation:

Begin by heating oven to 350 degrees. Mix the butter and Worcestershire sauce making sure to mix well. Put roast in a shallow and ungreased roasting pan. Brush the butter mixture over the roast and then press the peppercorns into the roast. Sprinkle with Thyme. The roast should be baked uncovered for 1 ½ - 2 hours. Use a meat thermometer to check for doneness. 145 degrees for medium-rare or 160 for medium. The roast should stand 10 minutes before carving.
