Pork Loin Chops Recipe
- 1/3 Asian fish sauce
- 1/4 cup chopped fresh cilantro
- 2 tbs. vegetable oil, divided
- 2 tsp. ground cumin
- 1 1/2 tsp. sugar
- 3 green onions, chopped
- 3 jalapeño Chile peppers, finely chopped
- 3 cloves garlic, minced
- 3 lb. boneless country-style pork ribs
Preparation:

In a food processor combine the fish sauce, cilantro, oil, cumin, sugar, green onions, jalapeno peppers and garlic and mix. A blender may also be used then remove about a 1/4 cup of the mixture to cover and refrigerate. Next spoon remaining sauce mixture into a large one gallon plastic bag over the ribs, turning to coat. Refrigerate to marinate 8 to 24 hours.
Start grill and heat to about 300°F to 350°F then place the ribs in the center of the sheet of heavy-duty aluminum foil and spoon the marinade from the bag over the ribs and cover with second sheet of foil, fold and crimp to seal into a tent shape. Now place the ribs on indirect heat and grill covered 1 to 1 1/2 hours or until tender. Finally remove the ribs from the foil and place the ribs over direct medium heat and brush lightly with reserved 1/4 cup sauce mixture grilling and additional 20 to 30 minutes.
