Potato Soup Recipe
- 3-4 potatoes peeled and diced
- ¼ cup of chopped celery
- 1 ½ cups water
- 2 Tablespoons of butter
- 1 quart milk
- 1 tablespoon parsley
- Salt and pepper to taste
- 2 hardboiled eggs diced
- ¼ chopped chive
- ¼ cup cooked chopped bacon

You rarely find it on a menu in a restaurant and forget the canned stuff; it’s just not that good. So I have to make my own. Here is a recipe I found that I like very much. Cook the potatoes and celery in the water and butter until tender. Then add milk, seasonings and eggs. Heat completely and stir often. Serve with chive, bacon and sour cream. Growing up my favorite soup was potato soup. It is still my favorite and it just is not that popular.
