Potato & Spinach Bake Recipe

Ingredients:

  • 1 lb of ground beef.
  • 1 chopped small onion
  • ½ cup of mushrooms, fresh
  • 2 minced garlic gloves
  • 1 10oz package of frozen spinach. Thawed, chopped and well drained.
  • ½ teaspoon ground nutmeg
  • 1 pound peeled, cooked and mashed russet potatoes
  • ¼ cup of sour cream
  • ¼ cup milk
  • Pepper and salt
  • ½ cup shredded cheddar cheese.

Preparation:

Potato & Spinach Bake Recipe

Begin by preheating oven to 400 degrees. Spray a 9 inch deep casserole with a nonstick cooking spray. Brown the ground beef in a skillet over medium heat, making sure to break apart meat then drain fat well. Add onion, mushrooms and garlic and cook until tender. Stir in spinach and nutmeg cover and cook until completely heated making sure to stir often. Mix potatoes, sour cram and milk then add to beef mixture. Salt and pepper and then spoon into casserole and sprinkle with cheese. Bake fro 15 to 20 minutes until puffed and cheese is melted.
