Quick and Easy Chicken Parmigiana Recipe

Ingredients:

  • 2 cups (6 oz.) uncooked penne
  • ¼ cup grated parmesan cheese
  • ¼ cup dry bread crumbs (unseasoned)
  • 4 boneless skinless chicken breast halves
  • 1 tablespoon oil
  • 1 14.5 ounce can of Italian style diced tomatoes
  • 1 small zucchini cut in to thin strips
  • 2 tablespoons cut ripe olives

Preparation:

Cook penne to your desired taste. Package should give you directions for your desired doneness. Mix cheese and bread crumbs. Cover chicken breast with the above mixture. In a large skillet over medium heat, heat oil until hot. Add chicken and cool 3 to 5 minutes on each side or until they are brown. Stir in tomatoes and zucchini and bring to a boil. Reduce heat, cover and simmer for 12 to 15 minutes Stir and turn chicken occasionally. Chicken juice will run clear when it is done. Serve chicken with pasta and sprinkle olives on top.
