Roasted Red Pepper and Wild Rice Salad Recipe

Ingredients:

  • 1 cup wild rice, cooked
  • 1 cup basmati rice, cooked
  • 2 tablespoons sherry vinegar
  • 2 tablespoons red wine vinegar
  • 4 scallions, chopped. Use the whole scallion, please, not just the white parts!
  • 1/2 cup pitted kalamata olives, chopped
  • 4 red bell peppers, roasted, seeded and chopped
  • 1/2 bunch Italian parsley, chopped
  • 4 tablespoons olive oil

Preparation:

Roasted Red Pepper and Wild Rice Salad Recipe

  • If your rices are cooked and your peppers are roasted
  • you should need no special equipment for this dish
  • Place the cooked rice in a bowl. Mix thoroughly
  • Add the rest of the ingredients. Mix thoroughly
  • Allow to sit for a minimum of 1 hour before serving
