Roasted Red Pepper and Wild Rice Salad Recipe
Ingredients:
- 1 cup wild rice, cooked
- 1 cup basmati rice, cooked
- 2 tablespoons sherry vinegar
- 2 tablespoons red wine vinegar
- 4 scallions, chopped. Use the whole scallion, please, not just the white parts!
- 1/2 cup pitted kalamata olives, chopped
- 4 red bell peppers, roasted, seeded and chopped
- 1/2 bunch Italian parsley, chopped
- 4 tablespoons olive oil
Preparation:

- If your rices are cooked and your peppers are roasted
- you should need no special equipment for this dish
- Place the cooked rice in a bowl. Mix thoroughly
- Add the rest of the ingredients. Mix thoroughly
- Allow to sit for a minimum of 1 hour before serving
