Southwestern Grilled Pork Tenderloin Recipe
Ingredients:
- 2 tbs. chili powder
- 2 tsp. ground cumin
- 2 tsp. garlic powder
- 1 tsp. dried oregano
- 3/4 tsp. salt
- 1/2 tsp. cayenne pepper
- 2 (1-lb) pork tenderloins
- Flour tortillas
- Salsa and Avocado (optional)
Preparation:

Combine chili powder, cumin, garlic powder, oregano, salt and cayenne pepper into a small mixing bowl then rub over the pork and chill for 2 hours. Coat the grill racks with a nonstick cooking spray and preheat the grill to medium high heat or about 350°F-400°F then grill the pork covered for 8 to 10 minutes per side or until instant read thermometer registers 165°F for well-done then let the pork stand for 5 minutes then slice the pork and serve on tortillas with salsa and avocado. Makes a great light meal on a hot day.
