Sweet Potato Quick Bread Recipe
- 1/4 cup mild-flavored oil
- 1/4 cup whiskey
- 1 cup sweet potato puree
- 2 t pure vanilla extract
- 1/4 cup pure maple syrup
- 1/4 cup soy creamer [or milk alternative]
Preparation:

in a large bowl, sift:
- 1 1/2 cup whole wheat pastry flour
- 2 T instant coconut powder [optional]
- 1/2 t fine sea salt
- 2 t baking powder
- 1/2 t baking soda
- 1 T Ener-g egg replacer powder
- 1/4 t ground nutmeg
- 1/2 t ginger powder
- 2 t ground cinnamon
Preheat oven to 350F. prepare an 8×4 loaf pan with non-stick cooking spray.
in a large bowl, whisk together: combine wet & dry ingredients, being careful not to over mix. pour batter into prepared pan.
bake for 35 minutes or until toothpick comes out clean. let cool for about 15 minutes before removing from pan, let cool completely before slicing.
