Tilapia in Butter Sauce Recipe

Ingredients:

  • 4 tbs. flour
  • 2 1/2 inch thick tilapia fillets
  • 1 tbs. olive oil
  • 6 tbs. butter, divided
  • Juice of 1 lemon
  • Minced fresh parsley
  • 6oz cut Shallots

Preparation:

Season flour to taste with salt and pepper then ‘dredge’ fillets in the flour mixture, shaking off excess. Heat the and half the butter in a large nonstick skillet over medium heat then add fillets making sure not to overlap. Cook until golden on bottom, about 3 minutes then flip the fillets over and cook 1 to 2 minutes more or until opaque through thickest part. Be certain not to overcook.

Drain fillets on a paper towel then transfer to a platter. Add remaining half of butter and shallots to the skillet and heat until the butter becomes frothy next add the lemon juice and lemon slices swirling pan to heat throughly. Pour the butter sauce over the fillets immediately before serving then sprinkle the tops with parsley. Serves: 4 as an excellent high protein dish.
